The Barkers of Geraldine's roasted tomato and green olive antipasto looked so tasty I couldn't pass it up, I just had to try it because I happen to be a huge fan of the Barkers antipasto's they make. It came in a tub that looked as if it was very carefully designed, the colours were very pleasing to the eye and the small picture of the ingredients on the tub were such a great touch. The tub itself was a very convenient size to place in the middle of cheese platters at parties or get-togethers. It comes with an easy twist off lid that makes it super easy and convenient to open.

First I had tried it with some tortillas and the taste was absolutely phenomenal it blew me away. It had a strong and tangy taste to it with a hint of sweetness also almost like an Italian sweet and sour sauce it gave my meal a real big boost in flavour. I then decided I would try it on crackers and it was divine, I have found my new favourite antipasto. The flavours all work so well with cheese and crackers and gives everything an Italian twist to it. The scent was simply mouth-watering, It was very strong and tangy with a little bit of pepper added to the delightful aroma. The texture was not too chunky not too smooth just right.

Overall I would purchase the Barkers of Geraldine roasted tomato and green olive antipasto again, I thought the amount you get for the price you pay is fair and the quality of this product is outstanding. I would definitely recommend this to anybody who wants a way to spice up their meals and add in loads of flavour or just wants to find a way to add an Italian twist to your meal.

I love a good antipasto style spread and as such my children have grown quite fond of the idea especially my very fussy eating 7 year old son. If there is ever a dinner I make he doesn't like (which is frankly quite often) his response is always but I just wanted a platter for dinner. I love to have some tasty dips and spreads to go with my platters and Barkers new range of Antipasto is absolutely perfect for that! Of all the range I have tried this roasted tomato and green olive was my absolute favourite, the combination of tomatos and olive is paired beautifully with both ingredients having a strong hold in the taste.

This was delicious with toasted ciabatta bread, and equally so with some soft cheese on a cracker. I loved the big bits of green olives generously spread through the container, olives are one of my favourites and I love to eat whole olives so having actual olives in this was just what I wanted. I found it so versatile though that while being an antipasto style it also made a beautiful base for a pasta salad I was making adding and is so rich in flavour I only had to use a small amount. The antipasto has an olive oil base so is actually a perfect way to make a dressing for a salad like this.

I am very pleased with this new range from Barkers as with all their products they have a real quality with fresh natural ingredients used that shows through in the flavour. This was my personal favourite from the range and I will definitely be buying it again it is more expensive than dips I have used on platters before like hummus and pesto style spreads but I think for the quality of the product it is a fair price.

Hubby and I quite enjoy antipasto type snacks (on the weekend especially) when watching a movie and so upon seeing these Barkers antipasto dips come up, I requested a few in the hope of trying something new! I was lucky enough to receive this one as well as a couple of others, and it was a real conundrum as to which to try first!! Olives are a favourite in our houses - black, green, stuffed with pimento or garlic or cheese..... or paired with roasted tomato, so decided on this one first!

The pictures on the front of the container definitely gave me an idea of what this antipasto might be like, and each of the variety are quite different in appearance, meaning you can easily tell them apart. The container itself is resealable, and nice and sturdy - it seals up well (no chance of the lid popping off and spilling the contents!). There is a foil seal inside also, so these can stay in the cupboard until opened and then need to be refrigerated.

Opening this tub and gazing at the contents, you can clearly see that Barker's have not skimped on quality. The antipasto is a lovely colour and consistency and you can clearly see the chunks of olive and tomato as well as lots of lovely oil in there too - making a tasty antipasto. The flavour is predominantly tomato, but you do not miss out on the olives either - it is really well balanced in flavour and mixture, and the aroma is very enticing!.

I have tried this antipasto in a few ways, and have yet to be disappointed! It works well as bruschetta, on crackers with cheese, and on homemade pizza. My husband enjoyed it just as a dip with crackers and chips - which I have to admit WAS pretty good!

All in all - I really enjoyed this antipasto, and definitely would consider buying it again. Whilst a little on the pricey side if you use it like a dip, but for having in your fridge to use in a more complex way, you will not be disappointed!!

I enjoy throwing olives on top of my pizza and have started using them in a few more dishes but was intrigued with this product so asked to give it a try. I'm not the biggest fan of roasted tomato, it isn't a taste I find particularly nice but hoped that the olive might balance any of that out. What I like about this pottle is that you twist the lid open, this means the lid is far less likely to fly off and spill its innards everywhere when my middle child doesn't check how she is carrying things and drops it on the floor (it survived two drops on the floor without loosing anything).

I tried this on a cracker with some delish cheese and discovered that it had a little hit of heat to it, nothing too overpowering and I enjoyed it well enough to finish the cracker off. My mother was probably the one who enjoyed this the most, coming back for seconds and thirds, she (like I) enjoy the big pieces of tomato and olive in it, makes the overall look more appealing. I decided to try this on a small pizza in lieu of tomato paste, it added a different element to the meal but I didn't find it added enough to the meal, more changing the textures than the taste.

This was a nice enough antipasto but not one that I can see me using again.

Olives are one of our favourite foods - all kind of olive, whatever the colour! My cousin has an olive tree at her bach and preserves her own. I have a tree too but so far it has not worked out how to grow any fruit. In the meantime, I get very excited when a new olive product comes on to the market. I liked the sound of this antipasto even before I opened the pottle; Roasted Tomato and Green Olive has the sophisticated appeal of Mediterranean cuisine, a treat indeed! And once the lid was removed and the protective foil drawn back, I was not disappointed - rich red colours and an enticing smell of fresh tomatoes and herbs assailed me, encouraging me to taste. Which, of course, I did - I wanted to see if the flavour would live up to the promise.

I am happy to say that I was not disappointed. The taste was superb, and the texture was chunky, containing large pieces of tomato and chopped olives. I could see many different ways that I could use this product - including eating the lot straight from the pottle - but I managed to put the lid back on and content myself with thinking of ways to use it while waiting for my niece and nephew to collect me. They were bringing me to an end of year school function and we would be going back to their place afterwards.

I took the antipasto with me as I thought it might be useful to use for supper later. There would be finger food at the function, but sometimes there is not enough to go round! This turned out to be the case so on our return to their house I raided their cupboard. They had some gourmet nut biscuits that I really like, so I topped some of them with half a teaspoon apiece of the tomato-olive mixture, added some tinned tuna that was in the fridge, and decorated each with half an olive. It took me all of three minutes to assemble the plateful but everyone was amazed at how well the combination worked. We cleared the biscuits in record time and I had to make some more!

Since then I have tried the antipasto with baked fish - I added it inside the foil outer so the flavours could permeate - and also with steamed mussels, heated with butter and drizzled over them. Both meals were well received and even the children were positive about the baked fish. All in all, I was delighted with the results, and am now looking at other possibilities for using this product in the future.
